We recently came across an amazing pistachio pesto pizza and knew right away we had to try this for ourselves with our high quality pistachios from Fiddyment Farms. This pesto sauce is quick, easy, and is incredibly delicious. The added texture and slight sweetness from the pistachios pairs so well with the basil and garlic. It’s honestly one of those sauces you kinda want to put on everything. The first time I made it, I considered just grabbing some pita chips and scooping bites into my mouth. I decided instead to use it on a quick pizza. I used naan (however you could make your own pizza crust either from scratch or by buying a premade dough). I spread the sauce on the naan, sprinkled some parmesan cheese on top, and baked in the oven to melt the cheese and heat the sauce. It was like a homemade appetizer from a fancy wine bar. I simply could not stop eating it. That said, the pistachio pesto would be perfect on fish, chicken, lamb, or your favorite pasta shape. Let us know how you use it!
Ingredients:
- 3 oz Fresh Basil (about two packed cups)
- 1 Cup Shelled Fiddyment Farm Pistachios
- 3 - 4 cloves Garlic
- Calolea Olive Oil (variable for desired consistency)
- Salt & Pepper to taste.
Directions:
Pulse dry ingredients in a blender or food processor until combined. Drizzle in the olive oil and mix until you reach the desired consistency depending on how you intend to use the pesto. And voila!
